Ingredients
- 3 pcs Tilapia
- 1 tbsp Ginger, grated
- 1 tsp Salt
- 2 cups Water
- 1 whole Ginger, sliced
- Pinch Salt & pepper
- 1 tbsp Canola or vegetable Oil
- 1/2 cup Tomatoes, sliced
- 1/2 cup Green Mangoes, sliced
- 1 small Red Onion, sliced
- 1 stalk Scallion, julienned
- 1/4 cup Vinegar
- 5 pcs Calamansi
- 1 tbsp Fish Paste
- 1 tsp Brown Sugar
- 1 tsp Caramba Chili Verde
- 1 handful Lato / Seaweed
- 1/2 cup Pomelo, chopped (optional)
Directions
- Soak the fish in ginger-salt solution for at least an hour.
- Stuff the fish with sliced ginger, then season with a pinch of salt and pepper each side.
- Pan-fry the fish on banana leaves for 10 minutes per side over high temperature.
- In a bowl, mix the tomatoes, green mango, onions, scallions, seaweed and pomelo.
- In a sauce dish, mix vinegar, calamansi, fish paste, brown sugar & a few drops of Chili Verde as desired.
- Serve everything “boodle fight” filipino style. Use the sauce for the seaweed salad and as a dip for the fish.
