Pan-Fried Tilapia with Spicy Ensaladang Lato

Ingredients

  • 3 pcs Tilapia
  • 1 tbsp Ginger, grated
  • 1 tsp Salt
  • 2 cups Water
  • 1 whole Ginger, sliced
  • Pinch Salt & pepper
  • 1 tbsp Canola or vegetable Oil
  • 1/2 cup Tomatoes, sliced
  • 1/2 cup Green Mangoes, sliced
  • 1 small Red Onion, sliced
  • 1 stalk Scallion, julienned
  • 1/4 cup Vinegar
  • 5 pcs Calamansi
  • 1 tbsp Fish Paste
  • 1 tsp Brown Sugar
  • 1 tsp Caramba Chili Verde
  • 1 handful Lato / Seaweed
  • 1/2 cup Pomelo, chopped (optional)

Directions

  1. Soak the fish in ginger-salt solution for at least an hour.
  2. Stuff the fish with sliced ginger, then season with a pinch of salt and pepper each side.
  3. Pan-fry the fish on banana leaves for 10 minutes per side over high temperature.
  4. In a bowl, mix the tomatoes, green mango, onions, scallions, seaweed and pomelo.
  5. In a sauce dish, mix vinegar, calamansi, fish paste, brown sugar & a few drops of Chili Verde as desired.
  6. Serve everything “boodle fight” filipino style. Use the sauce for the seaweed salad and as a dip for the fish.
